2 tsp Extra Virgin Olive Oil 1/4 cup chopped onion1/4 cup chopped Celery1/4 cup chopped bell pepper2 cloves Garlic 1/2 tsp. Thyme, ground 1/2 tsp. Oregano, ground 1/2 tsp. Basil 3/4 cup Chicken Broth or Bouillon 1 Tbls. Tomato Paste 1/2 tsp Salt 1/8 tsp Pepper, white 1/8 tsp Pepper, black 1/8 tsp Pepper, red or cayenne 1/5 cup, chopped or sliced Ripe Tomatoes 1 lb. Tilapia filets
In a small skillet, salute the onion, celery, green pepper, and garlic in oil until tender. Add the broth, tomato paste and seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through. Stir in the tomato.
Arrange the fillets in a 13-inch x 9-inch x 2-inch baking dish; top with vegetable mixture. Bake, uncovered, at 375 degrees for 15-20 minutes or until fish flakes easily with a fork. Serve over rice.
