Steve's Spinach Salad (with beets, tofu, chickpeas, etc.) (2nd week of January 2016)

1 package (10 oz) Spinach, fresh 10 oz grape tomatoes1 can Wegmans Olives, Medium, Pitted 1 container Wegmans Organic Extra-Firm Tofu 1 can Wegmans Organic Garbanzo Beans (15.5oz can) 5zo grams Banana Peppers 5 small pickled beets .5 medium (2-1/2" dia) red onion, sliced
1. drain block of tofu, pat dry, cut into 60 cubes, and marinate in a mixture of soy sauce and cider vinegar for at least 30 minutes. Then bake tofu at 350F for one hour (use cooking spray as "oil")
2. Portion all ingredients into 5 containers.
3. Place in refrigerato until ready to eat.
