Vegan Italian Skillet

Ingredients
1/2 Tbsp Extra Virgin Olive Oil3 links of Tofurky Italian Sausage, sliced1/2 cup Onion, diced2 large Zucchini Squash, sliced1 14.5oz can Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
Directions
Brown the sausage slices in the olive oil with the onions over medium high heat. Then add the zucchini, and sweat it for 2 minutes. Then add the tomatoes, and cover. Simmer for 15 minutes.

This is good over rice or noodles, but I actually prefer it all by itself.
