High Fiber Zesty Soup

Ingredients
1 can kidney beans (15.5 oz)3 cans Diced Tomatoes2 cans Pregresso Light Southwestern Style Zesty Vegetable Soup2 cups water
Directions
Put soup and tomatoes in a larger sauce pan. Mince kidney beans in a food processor or blender - you can leave them whole but I don't like them that way. Add to sauce pan and bring to a boil.

If you're watching your sodim - best steer clear of this one. Very yummy thoug.

    I am thinking bag of frozen mixed vegetables, cook in the 2 cups water. Use low sodium died tomatoes or fresh ones. Add the beans and a can of the Rotel tomatoes and chilies. Could add some cooked brown rice, onions, garlic, celantro, and chopped bell peppers. - 11/7/09
