Lentils & Beef Soup

35 oz Beef, top sirloin 10 tbsp Extra Virgin Olive Oil 1 large (7-1/4" to 8-1/2" long) Carrots, raw 50 grams Green Peppers (bell peppers) 100 grams Celery, raw 1 large Onions, raw 400 grams Canned Tomatoes 960 gram linte fiarta (boiled lentils)6000 grams Water, tap
Boil the beef for 2 hours in salted water.
Grate the vegetables and fry in oil.
Add the vegetables to the soup.
Add the canned tomatoes and boil for another 5 minutes.
Serve hot with 1 tbsp of sour cream.
Serving Size: Makes 16 servings (500 grams per serving)
