Saganaki Flambe

* kasseri Cheese, 16 oz * Egg, fresh, 1 large * *Flour, white, .25 cup * Olive Oil, 1 tbsp * Lemons, .5 fruit without seeds () * ouzo, 1 oz
Cut Cheese in 1/2 inch strips - try for 4 1/4 lb strips
Soak the cheese in ice water
Scramble the egg and pour it on a plate
put the flour on a plate
put a pan on to get hot with the oil
dry of the cheese and dredge in egg
dredge eggy cheese in flour.
fry eggy cheese in hot oil until you get a crispy coating (~ 2 minutes)
in the same pan at the table. Pour Ouzo on the cheees and light it up with one of those Long lighters. Stand back. Say "OPA!!!"After flames go down. Douse the cheese with lemon juice.
Maybe you'd better do this outside. It's delish
