1 cup Pamela's Baking & Pancake Mix1/4 cup shortening1/3 cup plus 1 tablespoon milk
Yield: 5 - 6 biscuits
Preheat oven to 375°.
In a large mixing bowl pour in Pamela's Baking & Pancake Mix and cut in shortening with fork or pastry blender until mixture resembles coarse crumbs. Pour milk into flour mixture while stirring with a fork. Do not let dough sit. Drop spoonfuls of dough onto a greased cookie sheet. Bake 12 minutes, or until brown on top.

I'm gf in the family, and the rest of my family, (dh, 2 dd's) are gluten addicts and breakfast fanatics. They all loved these tender, delicious biscuits and didn't realize they were gf. They didn't have a graininess or grittiness that a lot of gf pastries/baked goods have. What a fun find for me! - 12/27/10

I did not make the biscuits. I added about a tablespoon more Pamela's baking mix after seven years of failed dumplings. this stiffened the dough to the right texture, then dropped four golf ball sized blobs into gently boiling chicken soup. Ten minutes lid off, ten minutes lid on PERFECT dumplings!! - 3/6/21
