Quinoa Delight

Ingredients
100 grams Red Potato .25 cup Peanuts, dry-roasted 2 1tsp Olive Oil 1 tsp Salt - Table - 1 tsp. (by MIKNMEG) 1 tbsp Fresh Ginger (by WOMYN42) 2 tbsp Cilantro, raw 1 tsp Cumin seed 0.50 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
Directions
Cook quinoa according to the package directions. Boil the potato and chop it in very small pieces . Heat olive oil in a pan and add cumin and chopped green chili. Saute till fragrant then add potato and grated ginger. Saute till potato gets glossy and some color. Now add crushed peanuts and quinoa. Stir, cover and cook on low for 5 minutes. Sprinkle cilantro and serve.
