Mexican Turkey Bake

1/4 c. red bell pepper, diced 1/4 c. Sweet Onion, diced1 tsp Extra Virgin Olive Oil16 oz Ground Turkey - 97% fat free extra lean white turkey 1/2 package Old El Paso Taco Seasoning Mix (40% Less Sodium) 0.75 cup kernels Yellow Sweet Corn, Frozen 1 can Old el Paso Refried Beans - Fat Free 1 can Green chili peppers, canned, diced1 large Egg 3/4 c. Sargento Reduced Fat Mexican Cheese (1/4 cup) 1 cup Salsa 6 tbsp Daisy Light Sour Cream
-Preheat oven to 375 degrees
- saute red pepper and onion in olive oil until tender
- Mix onion/peppers with turkey, taco seasoning, corn, refried beans, chilis, and egg
- Put in 9" square baking dish and cook for 35 minutes.
- Top with cheese. Cook 10 minutes more.
- Garnish with salsa and sour cream
