6 Boneless Skinless Chicken Breast1 1/2 cups Panko bread crumbs1 tsp Garlic powder 1 tsp Onion powder 1/2 tsp Salt1/4 tsp Pepper, black 1 tsp Parsley, dried 1 tsp Oregano, ground 2 large Eggs1 1/2 cups shredded part skim mozzarella2 tbsp Fresh Basil 2 tbsp Fresh Parsley 2 tbsp Parmesan Cheese, grated 1 1/2 cups simple truth organic 4 cheese pasta sauce
Flatten chicken to even thickness. Mix panko, salt, pepper, garlic powder, onion powder, dried parsley and dried oregano in a shallow dish. Beat eggs in another shallow dish. Coat chicken with eggs and press into panko mixture, coating both sides. Spray a skillet with cooking spray. Cook chicken for 2 minutes on each side over med high heat. Place on cookie sheet sprayed with cooking spray and bake in a 375 degree preheated oven for 10 minutes. Flip, bake 10 more minutes. Remove from oven and top each chicken breast with 1/4 cup sauce, 1 tsp each basil, parsley and parmesan, and 1/4 cup mozzarella. Place back in oven for another 5 mins or until cheese is melted.
