Ingredients
* *Flour, white, 1.5 cup * Granulated Sugar, .75 cup * Egg, fresh, 1 large * Banana, fresh, 3 large * Baking Powder, 1 tsp * Baking Soda, 1 tsp * Salt, 0.5 tsp * Vanilla Extract, 1 tsp * Cinnamon, ground, 1 tsp * Walnuts, 0.5 cup, chopped * Butter, unsalted, 0.33 cup
Directions
Sift together flour, baking soda, baking powder, and salt and set aside.

Mix together 3 mashed bananas, 1/3cup melted butter, one egg, and 3/4cup sugar. Then stir in vanilla extract and cinnamon.

Add the liquid to the flour mixture.

Fold in walnuts.

Bake at 350 degrees for 10-15 minutes.

    These are so moist. Hard to make them into 24 but I managed, used margerine instead of butter and still yummy. I'll make again and I'm bringing to share at work tomorrow they are that good! - 12/14/08

    These are very tasty and moist. I used six small bananas and added some pumpkin pie spice. I also used mini muffin tins and baked them for 10 mins. (had to watch them closely though). This produced 33 small muffins, just the right size for eating on the run. Thanks for the great recipe! - 12/6/09

    Loved this, they do come out small but they're very filling, I used a fairy cake tray and got 24 out of it. Make sure your bananas are really ripe though! - 7/5/16

    These are very good, but the recipe should indicate a mini-muffin pan. I made it and got 12 perfect-sized standard muffins. Even having to use twice as much batter, it still has a decent calorie count for a breakfast treat. I also subbed whole wheat flour for half the flour, and used brown sugar. - 4/6/14

    I made these for my 10 y/o last night & loved them! I didn't get 24 muffins but that's less muffins I have to worry about eating. :-) I made a 12 plain banana & added chocolate chips & walnuts to the remaining mix for a little something extra.     Excellent recipe! My family loved these. I substituted finely chopped pecans since I didn't have walnuts. Was not able to make 24, but could try them as mini muffins next time. Definitely plan to make these again. Thank you! - 7/20/12
