Tomato Shrimp with Veggies

Ingredients
1 medium (2-1/2" dia) Onions, raw 1 serving 1 Med. Green Bell Pepper 1 eggplant, unpeeled (approx 1-1 Eggplant, fresh 1 tbsp Extra Virgin Olive Oil 1.5 cup Tomato Sauce, with tomato tidbits 16 oz Shrimp, raw
Directions
Saute veggies in olive oil, starting with onion. add a splash of water and cover. Let cook ~5min.
Add tomato Sauce. Let simmer.
Add shrimp - cook through
Serve over rice, cauliflower rice, or with dipping bread
