Steamed Pressure Cooker Banana Bread

Ingredients
1/3 cup Butter, unsalted 3/4 cup Sugar in the Raw (Turbinado Sugar) 1 Egg large at room temperature 1 tsp Vanilla extract1 cup, mashed Banana, fresh 1 & 1/2 cup Flour1 tsp Baking Powder 1/2 tsp Baking Soda 1 dash Salt 1/3 cup Buttermilk
Directions
Cream sugar and butter together well. Beat in vanilla and egg. Beat in the mashed bananas.

Combine the flour, baking powder, baking soda, and salt.

Add the dry ingredients along with the buttermilk and blend mixture well.

Pour into a greased 6-cup bundt pan. Batter should be half full but never more than 2/3 full. Seal top of loaf pan with buttered foil. Place a wire rack in the bottom of the pressure cooker. Add 2 cups water to the pressure cooker pot. Place the prepared bundt pan on the wire rack (trivet).

Pressure cook for 30 minutes on manual high. Use a natural pressure release (don't open exhaust).

Carefully remove loaf pan from cooker and place on a wire rack to cool. Remove the foil. Let cool to warm and carefully remove from pan, placing upright on serving plate.

Glaze as desired. Slice when cool. Wrap well Or cover to store. Just gets better with age!

    I'm sorry you did not find this recipe to your liking. I'm wondering if you followed the instructions explicitly. Mine turned out moist and delicious, but I can understand if the pale coloring was off-putting.
