Mama K's Vegetarian Meatloaf

3.0 cup, cubes Eggplant, fresh1.0 cup, chopped Onions, raw4.0 large Egg, fresh, whole, raw3.0 serving Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry)1.0 tsp Lea & Perrins, Worcestershire Sauce
Saute onions and Serrano peppers. Add diced eggplant. Saute until eggplant is light brown and soft. Remove from pan and let the vegetables cool, either by putting them in the fridge or cooling with ice cubes.
Mix 4 eggs. Add the eggs to the COOL vegetables and stir well.
Add 3 cups of oatmeal in 1/2 cup increments. Mix well, until oatmeal is completely coated in juice. Once everything is mixed well, put meatloaf mix in small beadwork pan.
Place in oven heated to 350 degrees. Bake for 1 hour & 15 minutes or until meatloaf is light brown.
