Ingredients
16 oz. of Chicken breast/tenders (No Skin)2 slices (6 1/4" x 4" x 1/16") extra lean 5%4 oz. Swiss Cheese1 Tbsp Butter (salted)1 Cup Chicken broth1 fluid oz lemon juice1 Tbsp of lemon zest
Directions
pound chicken just alittle to make thin
add ham and swiss cheese to each piece
(If using chicken tenders you will have aprox. 8 pieces.) roll up chicken from narrow end and secure with tooth picks.
Spray olive oil pam in pan and add 1 Tbsp of butter.
Brown chicken on all sides (aprox 8 minutes)
When chicken is brown add the chicken broth and lemon juice and lemon zest.
Bring to boil and then cover and simmer for 8 minutes.
Makes serving for 4
