Pumpkin Muffins (low-sugar)

Ingredients
2 1/2 cups all-purpose flour2 tsp baking powder1 tsp pumpkin pie spice1/2 cup apple juice concentrate1/2 cup milk (skim)1 egg1/4 cup canola oil1/2 cup canned pumpkin
Directions
Combine flour, baking powder, and spice in a large bowl. Mix apple-juice concentrate, milk, egg, oil, and pumpkin in a medium bowl. Add wet ingredients to dry ingredients. Stir until moistened (batter will be slightly lumpy). Pour batter into 12 lined muffin-tin cups. Bake at 400 degrees F for 20 minutes. Makes 12 muffins. These muffins will turn out more dense than most typical muffins.
