Curry Beef

Ingredients
1. 1/2 package of Vermont curry (4 blocks come in one package - you only use 2 blocks)2. 13 oz of round steak, cubed in small pieces3. water
Directions
1. Cube and brown the beef in cooking spray.
2. Add water to the beef to cover and boil (about 2 cups of water). Cook until beef is fork tender (about an hour and a half) make sure you check on the beef and don't let the water evaporate.
3. when beef is fork tender and you have about 2 cups of broth, add the curry cubes to the hot broth and beef until it dissolves (you can remove from heat at this point because the cubes will melt)

serve over hot rice or noodles.
**Optional - you can add cubed potatoes, carrots and onions to make it more stew like.

    I used to eat this all the time in Hawaii at the Poi Bowl. Of course we ate it with macaroni slad and rice. Yup to be young again. This recipe took me back home very good. - 4/28/09
