Zesty Chicken Tortilla Bake

Ingredients
1/2 cup Light Miracle Whip1/2 cup Flour3 cups 1% Milk8 oz Reduced Fat Shredded Cheddar Cheese1.5 lbs bonesless, skinless, chicken breasts1/2 cup Salsa16 8in Whole Wheat Low Carb Tortillas
Directions
Preheat oven to 375 degrees. Mix dressing and flour in medium saucepan with wore whick until wellblended. Cook and stir on medium heat unitl sauce thickens. Stir in half of the cheese. Reserve 1 cup of prepared sauce. Add chicken and salsa to remaining salsa. Spoon 1/3 cup of the sauce mixture down center of each tortilla; roll up. Place 8 of the roll ups, seam sides down, in each of two 11x8 baking dishes; top evenly wiht reserved sauce and remaining cheese. Bake 25 mins.

    My husband loved it! I substituted 1/4 cup of the mayo with fat free plain yogurt. I added 4 chicken bullion cubes and 2 T of butter to the white sauce. I didn't have any salsa, so I added mild taco sauce! If I made it again, I would make sure I had the salsa..it would have added some color! - 1/12/10
