Crockpot Margarita Chicken

Ingredients
Directions
4 frozen boneless skinless chicken thighs1/4 cup dijon mustard1/4 cup honey1 Tbsp low-sodium soy sauce2 minced garlic cloves3 Tbsp margarita mix
Place frozen chicken in bottom of crockpot.
Mix all other ingredients in bowl to create sauce.
Pour sauce over chicken.
Cover crockpot and cook on low for 7-9 hours or on high for 4-5. If your chicken is fresh, check it after 3 hours on high or 6 hours on low.
Serve with brown rice.
NOTE: If you don't have any margarita mix, you could substitute the zest and juice of one lime. That will lower the calories a smidge, too.
