Falafel (VwaV version)

Ingredients
2 cups chickpeas (garbanzo beans), drained and rinsed 1/4 cup bread crumbs / panko2 Tbsp flour 1 medium onion, chopped 2 cloves garlic 1/2 tsp baking powder 1/4 cup parsley, chopped1 tsp ground cumin1 tsp ground coriander1/4 tsp cayenne1/2 tsp salta few dashes of black pepperoil for frying (not calculated in recipe)
Directions
In a food processor combine chickpeas and bread crumbs, pulsing for about 30 seconds until chopped

Add remaining ingredients and process, scrapping down the sides, until relatively smooth, but still a little coarse/chunky

Transfer to a bowl, cover, and refrigerate at least 30 minutes

Shape into 1 1/2 inch balls and flatten into 2-inch diameter patties

Cook patties 2 1/2 to 3 minutes per side per pattie in about 1/2 inch of oil

Transfer to paper towel to drain

Serving Size: makes 16 patties
