Cheesy Potato Soup

Ingredients
4c. diced potatoes, peeled .5c chopped onion.5c diced celer.5c diced carrot1t salt2 chicken boullion cubes2.5c boiling water4T margarine4T flour.25t dry mustard.25t pepper2c milk - the nutritional values are from 2%1c shredded cheddar
Directions
Combine potatoes, onions, celery, salt and bouilion cubes in soup pot. Pour boiling water in and cover. Simmer until the veggies are done, about 15 minutes. Meanwhile, melt margarine in samller pot, Add mustard and pepper, stirring with a whisk. Alternate adding milk and flour, then whisk until thick. Add cheese, still whisking until melted and blended. Pour into the veggie mixture once veggies are tender. Ready to serve. This receipe makes 8 - 1 cup servings. It is easily doubled.
