Spanakorizo (Greek Spinach and Rice)

Ingredients
1 cup, chopped Onions, raw .25 cup Garlic 4 tbsp Extra Virgin Olive Oil 1 cup White Rice, medium grain 454 grams Spinach, fresh 0.25 cup Tomato Paste 4 tbsp Peppermint, fresh
Directions
Saute onions and garlic until soft. Add 1 tbsp Greek oregano, 1/4 c. chopped mint and/or dill, 1 1/2 tsp salt, freshly ground black pepper, rice, and the tomato pasted dissolved in 1/2 c. warm water. Stir and cook for a few minutes.

Add the spinach and the water. Bring to a boil. Cover and lower heat. Let simmer on low for about 25 minutes, or until the rice is tender. Let rest off of the heat, still covered for another 15 minutes before serving.
