Peanut Butter Choc Chip Cream Cheese Bites

1.0 cup Peanut Butter, smooth style, with salt2.0 cup Cream Cheese1.5 oz (22 whole kernels) Almonds, dry roasted (salt added)2.0 tbsp coconut, shredded unsweetened5.0 serving dove chocolate (1 piece, dark chocolate)0.5 tsp Cinnamon, ground1.0 tsp Vanilla Extract(3 to 5 packets of Stevia to taste)
Using a food chopper, chop up dark choc into chip size chunks.
Divide into 4 parts, add 1 part to "batter" and set aside the other 3 parts.
With a hand mixer, mix together peanut butter, softened cream cheese, stevia, vanilla, cinnamon and 1 part choc chunks.
Cover and refrigerate for about 30 minutes.
While you are waiting, chop almonds with food chopper.
Mix together in a bowl with a spoon: chopped almonds, coconut and other 3 parts of dark chocolate.
Pull out batter, using a small scoop, scoop out batter mixture, roll in the dry mixture and place on a baking sheet lined with wax paper.
Freeze until you need a sweet treat! Enjoy!!
(Note: make even lower carb by using natural, unsweetened peanut butter AND 72 to 80% dark chocolate!)
