Ingredients
Directions
2 1/2 cups flour1.2 cup sugar2 tsp baking powder1/2 tsp salt1 egg1 cup milk (I used 2% for recipe calculator)1/4 cup canola oil1 cup strawberries, cut, slightly sweetened, with juices.
Mix dry ingredients together. Beat egg. Add milk and oil to egg. Mix into dry ingredients - mix fully but don't overmix or they'll be tough. Fold in strawberries.
(Note: there was so much juice with my strawberries, I probably could have eliminated the oil, which would bring the calories down.)
Bake at 400 degrees for 20 minutes.
Makes 9 jumbo muffins.

AUGAUG
I used a little less canola oil as suggested, 3/4 cup whole wheat flour and then 1 1/2 cups regular flour, and added 1/2 tsp cinnamon. I made 6 in the pan with 6 Bundt cups, and they took longer to cook, but looked beautiful. They turned out a little gummy and not incredibly flavorful. - 6/1/08
