Cheesy Cauliflower Rice

Ingredients
1.0 head, large (6-7" dia) Cauliflower, raw2.0 tbsp chopped Shallots1.0 tbsp Extra Virgin Olive Oil4.0 oz Cream Cheese0.5 cup Aldi's Happy Farms Shredded Mild Cheddar Cheese (1/4 C)
Directions
Run chopped cauliflower through food processor. Lightly saute' shallot in olive oil and add cauliflower. Sauté until just tender. Stir in cream cheese and shredded cheese until melted and combined. Season with salt and pepper.
