1 Box (1 oz) Jello Sugar Free - Fat Free Instant Pudding, Cheesecake1 1/2 Cup 2% Milk1 Can (15 oz) Solid Pack Pumpkin (not pumpkin pie filling)Pumpkin Pie Spice to taste
Mix the Cheesecake flavored pudding with the milk. Stir in the whole can of pumpkin and spice to flavor. Refrigerate until ready to serve.

I made this this weekend, and it warms the cockles of my heart knowing I'm eating mostly pumpkin which is incredibly good for you, AND that something this healthy could taste so decadent... I think it tastes heavenly. A little squirt from a can of Rediwhip, and voila! Perfect dessert or snack. - 2/1/10
