Simple Slow Cooker Pot Roast

Ingredients
1 or 2 Bay Leaves1 tsp Pepper, black 1 tsp Thyme, ground 100 Carrots, raw 100 Celery, raw 100 Onions, raw 860 Beef, round steak 2 tbsp Extra Virgin Olive Oil 1 tbsp Guar Gum - Bob's Red Mill 2 cup Beef broth, bouillon, consomme 1 tsp Hot Pepper Sauce
Directions
Dry meat and chop veg. Sear meat in 1 tbsp. hot oil. Remove meat to crock pot. Add second tbsp oil to pan and when hot, saute vegetables until they take colour. Add the sauted veg to crock pot. Deglaze the pan with enough broth to free any fond that has formed. Set the stock aside and add the bay, thyme,hot sauce and pepper (use less hot sauce or omit if a less spicy roast is desired.) Pour stock and fond over the meat and seasonings. Cook on High setting for two hours. Check for doneness and tenderness. Cook one additional hour if needed. The meat should be tender but not too soft. Remove the cooked roast and place the cooking liquor into a small saucepan. Raise the heat and when nearly boiling, add guar gum a little at a time; whisk with each additon -- it works quickly and you may not require all of it to give the gravy some body. Too much will give a slimy consistency, so err on the side of caution.
