Vegetarian Couscous Paella

Ingredients
PAM spray1 medium Vidalia onion, chopped4 cloves garlic, minced1 1/2 cups low sodium chicken broth1 (9-oz) package frozen baby lima beans1 cup frozen green beans1/2 tsp turmeric1/4 tsp cayenne pepper (more or less to taste)1 cup whole wheat couscous (dry)1 medium tomato, chopped1/4 cup chopped fresh cilantro
Directions
Spray a large saucepan or soup pot with a tight fitting lid with PAM; saute onion and garlic until onion is translucent. (may have to spray it more then once as it cooks) Add chicken broth, lima beans, peas, turmeric & cayenne pepper. Bring to a boil then reduce heat, cover and simmer for 10 minutes or until lima beans are cooked through. Remove from heat and stir in couscous. let stand for 5 minutes. Serve with tomato and cilantro sprinkled on top. Makes 6 1/2-cup servings.
