Vegetable beef casserole

Ingredients
coconut oil cooking spray1 eggplant, 1/2" slices3 medium Zucchini, sliced3 cup Squash - Yellow, sliced4 roma Tomatoes, sliced2 tbsp dried Basil (divided)2 tsp Italian Seasonings 1 med yellow onion1lb 80/20 ground beef 8 oz Mozzarella Cheese, grated 4 tbsp Parmesan Cheese, grated
Directions
Spray 9x13 baking dish with cooking spray. Grill eggplant, zucchini and squash. Then layer veggies into baking dish. Sprinkle each layer with a bit of basil. Add sliced tomatoes. Brown meat and onion with some seasoning of your choice (I used Italian seasoning), drain. Spread meat over top. Shred some mozzarella and Parmesan. Sprinkle cheese on top with a little more basil. Bake at 350 for 45 minutes. Enjoy
