Spice Mixture1 tsp allspice½ tsp cinnamon½ tsp cardamom ¾ tsp ginger¼ tsp white pepper1⁄4 tsp nutmeg ¾ tsp salt---Cake¼ cup shortening¼ cup Scented Cinnamon Honey Butter (https://recipes.sparkpeople.com/recipe-detail.asp?recipe=3082880)¼ cup cream cheese1 tbsp vanilla¾ cup sugar1 egg½ cup aquafaba1 cup all-purpose flour1 cup buttermilk1 cup whole wheat flour¼ cup cornstarch½ tbsp baking powder¾ tsp baking soda2 tbsp rock sugar
Preheat oven to 350 degrees F. Grease a 9” Bundt pan.
In a small bowl, whisk together the Spice Mixture. Set aside.
In a large bowl cream together the shortening, Scented Cinnamon Honey Butter, cream cheese, vanilla and sugar until well combined.
Add the egg and aqafaba, followed by the Spice Mixture, beating well.
Beat in the all-purpose flour, followed by all the buttermilk.
Beat in the whole wheat flour, cornstarch, baking powder and baking soda until smooth.
Fold in the rock sugar.
Pour into the prepared pan and tap on the counter to remove air bubbles.
Bake for 45 minutes, until a skewer comes out clean.
Cool in the pan for 10 minutes, then invert onto a wire rack and cool completely.
Serving Size: Makes one 9" Bundt, 16 slices
