2.0 tsp Oregano, ground3.0 cup, cubes Eggplant, fresh2.0 clove Garlic150.0 Grams Mushrooms, fresh2.0 medium (2-1/2" dia) Onions, raw1.5 cup, sliced Zucchini2.0 tbsp Extra Light Olive Oil150.0 gram(s) bell pepper, red, sweet, raw3.0 cup Canned Tomatoes
Chop all vegetables, mince garlic, and put all in roasting tray.
Drizzle oil and sprinkle mixed herbs then stir.
Cook 180-200°c for 30-45 mins.
Complete if using for couscous.
For sauce......
Stir through the tinned tomato and, if desired, a pinch of brown sugar. Blend and portion into tubs.
