Simple lentil soup

1 cup (250 mL) dried red lentils3 cups (750 mL) water0.5 Tbsp olive oil 1 carrot, diced1 large onion, diced2 celery stalks, diced0.5 (7.5 mL) tsp salt (or to taste)1 Tbsp (15 mL) cumin (or to taste)1 tsp (5 mL) chili powder (or to taste)1 tsp (5 mL) Lemon Juice
1. Rinse the lentils and dice the vegetables.
2. Heat up a soup pan, add oil and sautee the vegetables until the onions begin to become transparent.
3. Add the lentils, water and salt. Bring to a boil.
4. While the lentils are boiling, skim the foam that forms off the top of the soup. Once the foam stops forming add the other spices and lemon juice. Add more water as desired.
5. Cook until the lentils are done and the vegetables are tender.
Serving Size: makes 5 1 cup servings
