Shrimp with Creamy Roasted Red Pepper Zucchini Noodles

Ingredients
4 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh 2 tbsp Extra Virgin Olive Oil 4 oz Goat Cheese, Soft 3 tbsp chopped Shallots 4 clove Garlic 8 cup Zucchini - Steamed or raw 1 cup Great Value Italian Stewed Tomatoes with Basil, Garlic, and Oregano 16 oz Shrimp, raw
Directions
Roast red peppers, add roasted bell pepperrs intothe blender with the olive oil, goat cheese and a tsp of sea salt. Blend until smooth.

Saute the shrimp in a skillet with olive oil , minced garlic and diced shallot.

Use 3 good size zucchini's and spirialize them, heat in a large deep sided skillet over medium heat then all 1/2 cup olive oil, shallot, and minced garlic saute for a couple minutes until he onion is softened but not browned. add another tsp of sea salt, and the zucchini noodles and saute using tongs to toss. As the noodles begin to soften but before shedding water add the sauce and cook until the sauce is heated. Add the shrimp and serve immediately.

You can adjust the salt to your liking, and serve with chopped parsley, grated parmesan cheese or additional goat cheese.
