Very Lemony Chicken

Ingredients
  • 1-1/2 lb. chicken breast, skinned and fat removed
  • 1/2 cup fresh lemon juice
  • 1/2 cup fresh sliced lemon peel
  • 3 teaspoons chopped fresh oregano or 1 teaspoon dried oregano, crushed
  • 1 medium onion, sliced
  • 1/4 teaspoon salt
  • black pepper to taste
  • 1/2 teaspoon paprika
Directions
1. Place chicken in 13x9x2" glass baking dish.



2. Mix lemon juice, lemon peel, oregano, and onions. Pour over chicken, cover and marinate in refrigerator several hours or overnight, turning occasionally.



3. Sprinkle with salt, pepper, and paprika.



4. Cover and bake at 325º F for 30 minutes. Uncover and bake 30 minutes more or until done.

    i am marinating mine for half hour used lime juice and no peel as well garlic pepper seasoning some fresh basil and sage as well - 8/1/09

    Very tasty! I really love lemon flavor so this was good. I didn't have time to marinade it but it still turned out good. I added a little garlic powder and used a bit less lemon/peel. I'll probably be making this one again! - 6/9/09

    Won't be making this again. Tried doctoring it up, but no luck. There was no juice/sauce, the onions were to crunchy and the lemon flavor was overwhelming, you couldn't taste any of the other spices. - 1/13/08

    Didn't like the lemon peel in it and husband though too lemony. When I made the leftovers, I strained out the lemon peel, added garlic, red caynenne pepper, oregeno and mixed with a little mashed potatoes to thicken the gravy. Served over mashed potatoes and it was really good and hubby liked it. - 10/24/07
