Roma Chicken

Ingredients
1 Tbs Olive Oil1 Tbs Margarine2 Large chicken breasts, chopped1 onion, sliced2 garlic cloves, pressed1 can (14.5oz) Italian Stewed Tomatoes1 cup chicken broth
Directions
In large skillet, heat oil and margarine over medium-high heat. Add chicken; cook, turning once, until browned on both sides. Remove checking from skillet; set aside. Add onion and garlic to skillet; cook and stir until softened, but not browned. Return chicken to skillet. Add tomatoes and broth (you can also add green olives and capers at this point if you'd like). Cover; reduce heat and simmer 20-25 minutes or until chicken is no longer pink in center. Serve with Rice if desired (make sure to add nutritional info for rice, capers, and green olives if used)
