Blackened Chicken

5 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted .75 cup Butter, salted Seasoning1 tbsp Salt 1.5 tsp Garlic powder 1.5 tsp Pepper, black 1 tsp Pepper, white 1 tsp Onion powder 1 tsp Cumin seed .5 tsp Pepper, red or cayenne .5 tsp Paprika
Let the chicken come to room temperature before blackening. Combine the seasoning mix well. Heat a heavy skillet over very high heat until it is very hot and just short of the point at which you see white ash, about 8 minutes. Dip each piece of chicken in melted butter and sprinkle with seasoning mix, using about .5 tsp each. Place the chicken in the hot skillet. Pour about 1 tsp butter on top f the fillet. Cook uncovered over the same high heat until crusty, about 2 minutes. Turn over and pour 1 tsp more melted butter on top of each. Cook just until tender, about 2 minutes.
