Iona's Veggie Mash

Ingredients
2 parsnip (9" long) Parsnips .5 head, medium (5-6" dia) Cauliflower, raw 2 medium (2-1/4" to 3-1/4" dia.) Potato, raw 1 stick Butter, salted .5 cup Yogurt Plain Greek Yogurt, non-fat .5 cup Milk, nonfat (skim milk) 4 tbsp Gorgonzola Crumbles
Directions
Melt the butter in large frying pan, add parsnips and saute until begin to soften. Add other vegetables. Cover and stir occasionally until all are soft. Put into a food processor, add milk, cheese and yogurt, and blend. Salt and pepper to taste.
