Whole Wheat English Muffins

Ingredients
1 (.25 ounce) package active dry yeast 1 tablespoons sugar, divided 1/4 cup warm water (105 degrees to 115 degrees) 1 cup milk, scalded 2 tablespoons butter or margarine 3/4 teaspoon salt 3 cup whole wheat flour, divided1 cups all-purpose flour1 egg, beaten Cornmeal
Directions
1.Dissolve yeast and 1 tablespoon sugar in water. Set aside. In a mixing bowl, combine milk, butter, salt, 1 cup whole wheat flour and 1 cup all-purpose flour. Beat well with an electric mixer. Add egg and yeast mixture; beat until smooth. By hand, stir in enough remaining whole wheat flour to make a soft dough. Knead on a lightly floured surface until smooth and elastic, about 6-8 minutes. Place in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Place on floured surface. Roll to 1/2-in. thickness. Cut into circles(a clean tuna can works well). Allow to rise until doubled. Lightly sprinkle an electric fry pan or griddle with cornmeal. Bake over low heat for 10 minutes until nicely browned. Turn and bake 10 minutes longer. Cool. Store in the refrigerator. To serve, split with a fork and toast. (or slice with knife)

    Awesome!!! I made a few small changes as well. I didn't use white flour, instead I used 3 1/2 c whole wheat flour and 1/4 c. wheat gluten and 1/4 c ground flax seed. I also used olive oil instead of butter and honey instead of sugar. My whole family loved them! - 5/24/08

    These were great. I did also make changes. I used 1 cup warm water and used powdered milk. Did not use sugar used honey instead. Used 3 cups wheat flour and 1/2 cup wheat germ and 1/2 flax seed meal.
    Placed everything in the bread maker and let it do the work for me. Will make again.

    My whole family loved them! I made 2 small changes. 1)I didn't have butter or margarine so substituted 1/4 cup ground flaxseed meal. 2)Instead of scalded milk, I used warm water and added powdered milk to the dry ingredients. I let the breadmaker do the mixing and kneading. I'll make these often! - 5/23/08
