Pork Carnitas slow cooker

Ingredients
1.5 cup Rotel Diced Tomatoes and Green Chilies 32 oz Pork Loin Roast (by PRISG66) 1.5 medium (2-1/2" dia) Onions, raw 227 oz La Victoria Salsa Verde thick and chunky med. 1 tsp, crumbled Bay Leaf 1 tsp Pepper, red or cayenne 1 tsp Chili powder .5 tsp Garlic Salt (Coarse Ground with Parsley) - Lawry's (by VEEALEX) .25 tbsp *McCormick ground cumin (by CHGOMOMMA) .25 tsp Pepper, black .25 tsp Oregano, ground
Directions
Line the bottom of the crock pot with thick slices of onions dicing some for later. Place pork roast on top of onions. Season roast with all the spices on both sides. Place bay leaf on top of roast. Add rest of onions diced up. Pour the whole can of Rotel tomatoes on and around roast. Pour half the jar of Salsa Verde in and around roast. Cook on high for 4-5 hours, remove bay leaf, shred meat and return to pot. Serve.
