Baked Trout Ole'

2 Pounds Trout, Whole or Filleted 1 Can Diced Tomatoes with Green Chilies, 14.5oz3 Tablespoons Lime Juice1/2 Medium Onion1 Tablespoon Garlic, Minced3 Tablespoon Cilantro1/2 Teaspoon Olive Oil1/4 Teaspoon Black Pepper1/4 Teaspoon Salt1/4 Teaspoon Crushed Red PepperAdd a couple sliced Jalapeño peppers if you want more heat!
Preheat oven at 400 degrees F.
Rinse fish and pat dry. Place in baking dish.
In a separate dish, mix remaining ingredients together and pour over fish.
Bake for 20 to 25 minutes or until fork-tender.
Note: Since my boys and I like to fish so much we often have fresh whole trout around. I also skin all my fish. If you use fillets you will probably only have to bake for 15 minutes depending on how thick they are.
