Chinese Fried Eggplant

Ingredients
Eggplant, fresh, 3 eggplant, unpeeled (approx 1-1/4 lb Scallions, raw, 1 medium (4-1/8" long)*Soy Sauce, 1 tbsp Salt, 2 tsp Granulated Sugar, 1 grams *Canola Oil, 3 tbsp Chinese red pepper sauceGround beef, lean, 30 grams Ginger, 2 gramsGarlic, 2 grams
Directions
1. Slice eggplant into half and then slice thinly
2. Fry ground pork with ginger and garlic in oil to remove the meat smell
3. add eggplant, chinese red pepper sauce, salt, sugar and soy sauce. Add a little bit of water if desired. Stir until eggplant is tender
4. Add scallions and stir for another 1 minute.
