Balsamic roasted beets, quinoa and blueberry salad

Ingredients
1 tbsp Olive Oil 1 cup Blueberries, fresh 1 oz (22 whole kernels) Almonds, dry roasted 0.50 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 1 tbsp Balsamic Vinegar 300 grams Beets, boiled
Directions
1. Peel and dice beets. Sprinkle with olive oil. Wrap in tinfoil and bake at 250F for one hour. Set aside.
2. Prepare quinoa
3. Cool all ingredients before mixing all together.
