Low Carb Sausage Balls w/Kale and Onions

2/3 cup coconut flour, sifted16 oz pork sausage, no casing2 cup cheese, shredded 1 large egg 1 tsp baking soda, sifted3 tbsp coconut oil 5 oz kale or greens of choice, finely chopped1 medium sized onion, finely chopped3 garlic cloves, crushedSalt and freshly cracked pepper to taste
Saute and wilt down chopped greens with 3 crushed garlic cloves, 2 tablespoons of coconut oil, salt and pepper (yields approx. 1 cup). Caramelize 1 finely chopped onion in 1 tablespoon of coconut oil, salt and pepper (yields approx. 1/2 cup). Cool the greens and onion and mix well with all the other ingredients. Form approx. 36, 3/4 inch balls and place on flat, rimmed baking pan, bake in 350 oven for 30 minutes.
