Horseradish Vinaigrette

Ingredients
2 tsp Champagne Vinegar 2 tsp Horseradish 4 tbsp Extra Virgin Olive Oil
Directions
1. Combine the vinegar and horseradish (and salt and pepper to taste, if using...I do not use it.) in a medium, nonreactive bowl and whisk until thoroughly mixed.
2. Whisking constantly, slowly pour the oil in a thin stream down the side of the bowl. Whisk until completely incorporated. Taste and adjust the seasoning as desired.
