2.0 large Egg, fresh, whole, raw0.5 tbsp Garlic powder1.0 tsp Ginger, ground1.0 1tsp Canola Oil6.0 oz Pork Tenderloin1.0 medium Carrots, julienned0.5 stalk, large (11"-12" long) Celery, finely chopped1.0 small Onions, finely chopped 1.0 small Peppers, sweet, red, thinly sliced1.25 serving Brown rice (1 cup cooked)1.0 tsp Sriracha Hot Sauce (Rooster sauce)2.0 tbsp Kikkoman Less Sodium Soy Sauce1.0 serving Stevia Extract In The Raw Sugar Substitute [1 packet]
1. In a large non-stick frying pan over medium high heat, add oil and pork. Cook 3-4 minutes until pork in done.
2. Add celery, onion, carrot and red pepper. Cook 3-4 minutes until veggies are cooked. (Stir frequently so veggies don't stick. )
3. While veggies are cooking, in a small bowl Crack eggs and stir until combined.
4. In a separate small bowl, combine low sodium soy sauce, garlic powder, ground ginger, stevia packet, and Sriracha. Set aside.
5. In frying pan, push veggies to the side. Add eggs and mix around pan quickly until cooked (1-2) minutes. Add cooked rice. Stir to combine. Add reserved soy sauce mixture. Stir to combine.
6. Turn off heat. Ready to serve.
