Mexican French Bread Pizza

  • Number of Servings: 4
Ingredients
1 loaf of French bread, from a bakery (I used Walmart Marketside Traditional French Bread. Be forewarned that this bread contains HFCS as an ingredient) 4 TB Smart Balance, softened1/2 cup of mayonnaise (I used Trader Joe's Organic Mayonnaise) 3/4 cup whole black olives, sliced (You may also buy a can of olives that are already sliced in the can ) 1 tsp taco seaoning (I used Engage Organics Mexi-Mix Salt-Free Blends)2 green onions, chopped with white and some green parts1 tbsp fire-roasted green chiles 2 cups of shredded Mexican cheese blend (bagged)
Directions
Preheat oven to 325 degrees Farenheit. Line a large cookie sheet with aluminum foil. Slice bread in half horizontally and then slice each of the two halves lengthwise. Think of the photo on the box of Stouffer's French Bread Pizza and you'll get the idea. Set bread aside.

Mix all remaining ingredients together in a large bowl. Spread 1/4 of this mixture on the inner side of each bread slice.

Bake for 23-30 minutes or until cheese melts, is bubbly and just beginning to brown. Serve.
