Moujadara with Rice

Ingredients
1 c lentils, rinsed1 1/2 c brown rice3- 3 1/2 c water4 onions, sliced1/2 t cumin1/2 c olive oil2 t kosher salt1 t black pepper1/4 t allspice1/4 t cinnamon1/4 t cloves1/4 t ginger
Directions
This makes 6 servings-- big servings too. Serve with pita bread and salad.

Put lentils in a deep pan, add water and bring to a boil for a few seconds. Then simmer for 20 minutes, add spices and rice. Keep simmering for at least 20 minutes, or until rice is tender (add water as needed). Meanwhile, heat oil in a seperate pan. Fry the onions until dark brown, then remove onions with slotted spoon and set aside. Add the used oil to the rice and lentil mix. Stir gently, then cook for five more minutes. Serve with onions on top. Delicious also as a burrito filling. Top with hot sauce as desired.

    I reduced the onions from 4 to 2, but other than that, this is DELICIOUS. Hate to say it, but this moujadara is much better than Situ's! - 4/2/13
