Tabbouleh Salad

Ingredients
* Bulgur, Whole Foods Bulk, 1 svg = 1/3 cup dry (40 g), 1.5 cup * Boiling water, 1.5 cup * Cucumber (with peel), 1.5 cup diced * Parsley, fresh, 1 cup chopped * Red Ripe Tomatoes, 1 cup, chopped or sliced * Fresh Chives, 0.25 cup chopped * Safeway Lemon Juice, 100% Juice, 0.25 cup * Trader Giotto's Extra Virgin Olive Oil, 1 tbsp * Salt, 0.5 tsp * Pepper, black, 0.5 tsp * Garlic, 4 cloves, minced
Directions
Combine bulgur and boiling water in a sauce pan. Cover and let stand 30 minutes. Drain. Place bulgur in a large bowl.

Add cucumber and remaining ingredients. Toss well. Cover and chill at least one hour.

Makes 8 servings, each about 1 cup.
