Ingredients
Zucchini, 2 cup, sliced (2 medium, sliced in half and quartered)Tomato Sauce, 15-ounce canOnions, 1 large, slicedPotatoes, 1.5 pounds (we like whole baby potatoes)Olive Oil, .25 cupBasil, 1 tbsp driedBay Leaf - 3 leaves OR 1 tsp, crumbledSalt, 1 tspPepper, black, 1 tspGarlic, 3 cloves chopped or 1.5 tsp powdered
Directions
Take zucchini and potatoes, coat in olive oil, salt, and pepper. Put in foil-lined pan or casserole dish.

Cut onion into thin slices over the top of the zucchini and potatoes.

Put bay, basil, and garlic over the other ingredients. Cover with tomato sauce.

Bake for 1 hour at 450 degrees.
