Cold Sesame Noodles

Ingredients
.25 cup Peanut Butter, smooth style, with salt 2.5 oz Seeds, sesame seeds, whole, roasted and toasted 5 tbsp Soy Sauce 2 tbsp Nakano Seasoned Rice Vinegar 6 tsp Domino Light Brown Sugar 3 tsp Ginger Root 2 clove Garlic 600 gram(s) Wegmans Asian Classics Lo Mein Noodles 1 cup, grated Carrots, raw 1 serving Bell Pepper - Orange - 1 large (3 - 3.75 inches) (by GARYO12) 2 cup Edamame, shelled, fresh 1 cup, pared, chopped Cucumber (peeled)
Directions
Peel and cut veggies. Sprinkle salt on cucumbers in colander to remove excess water. Set aside.

Puree 4 Tablespoons sesame seeeds with soy sauce, peanut butter, vinegar, sugar, ginger, garlic in blender or processor until smooth, about 30 second. Add hot water 1 Tablespoon at at time until the consistency of heavy cream.

Cook noodles according to directions. Rinse under cold water. Add veggies to noodles in bowl, cover with sauce and sprinkle with remaining sesame seeds.
